Low net carb Chocolate Muffins that taste good

At the beginning of the year I switched to a modified Ketogenic diet. I am focusing on higher protein, lower healthy fat, and really low carbs. I am also sticking to around 1200 calories a day so every calorie counts. I have so far lost 30 pounds.

Here is a modified recipe from my awesome wife Olivia for low net carb Chocolate Muffins that actually taste good.

Ingredients:

2 cups Carbquik
1/3 cup So Delicious Heavy Almond Creamer
1/3 cup Unsweetened Silk Almond Milk
8 tablespoons Stevia
2 tablespoons coconut oil
1 TB Flax Seed
40 grams Choc Zero Milk Chocolate (4 pieces chopped up)

Instructions:

  • Heat oven to 400 F. Place in 10 regular-size muffin cups.
  • Stir all ingredients except until moistened. Divide batter evenly among cups.
  • Bake 13 to 18 minutes or until golden brown.
  • Enjoy!
